<p>There’s grilled cheese — the kind a babysitter might have made you, or you might have made yourself in, say, a grubby college dorm kitchen, with two slices of spongy Wonder Bread and a few rubbery slices of American cheese. Grilled cheese is, to be sure, a humble food (if, in such a form, one can even call it that), but bread and cheese need not be humble. These are the kind of staple, simple ingredients that make a meal divine or dismal depending on their quality.<br />
I’ll describe as evidence the best grilled cheese sandwich I’ve ever had: served in a cooperative dining house at my college (where nearly everything was made from scratch by members), on inch-thick homemade sourdough bread, with gooey, buttery-rich cheese and served with piping hot tomato soup for a simple hearty and filling — one might almost say fulfilling — supper in early fall.<br />
It was a dinner like a prayer, a perfect complement to the blustery, pink-cheek winds outside. I’ve never had one so perfect since, in its perfect tuning to the needs of human bellies for sustenance. It was in perfect aesthetic harmony with that moment and place of earthly climate, the richness of the meal echoing the richness of the turning of the leaves to wine, mustard and rust.<br />
Joan’s Gourmet Grilled Cheese, served with chips and a pickle for $6.95 at PattiCakes Café in the Mellwood Arts and Entertainment Center, falls somewhere between those bookends of blissful inspiration and prosaic banality. Smoked Gouda cheese and thin slices of apple are paired between slices of sourdough bread and grilled to make a sandwich that is humble, but not too humble, a treat for a lunch that is a neat hop beyond dull.<br />
Also worth a try for seekers of grilled-cheese bliss is The Mellwood Gourmet Grilled Cheese (also $6.95), with brie, feta, bacon, yellow tomato and watercress on Texas toast, served with sweet and savory citrus dressing.</p>
